University of Idaho celebrates opening of meat science facility – Moscow-Pullman Daily News

University of Idaho Opens New Meat Science and Innovation Center in Moscow, Idaho

The University of Idaho officially celebrated the grand opening of a new state-of-the-art meat science facility on Friday, marking a significant milestone for Idaho’s agricultural education programs and the university’s College of Agricultural and Life Sciences.

The Meat Science and Innovation Center Honoring Ron Richard opened its doors at 775 Perimeter Drive on the west side of the Moscow campus, drawing a crowd of attendees who toured the facility, listened to remarks from university leadership, and purchased cuts from the university’s own Vandal Brand Meats label.

University of Idaho President C. Scott Green addressed the crowd during the opening ceremony, and Leslie Edgar, Dean of the College of Agricultural and Life Sciences, also spoke at the event. A ceremonial ribbon cutting officially marked the opening of the new building.

A Facility Built for Idaho’s Agricultural Future

The new center includes a fully operational abattoir, a fabrication room, processing rooms, classroom space, and cold storage, giving animal science students hands-on exposure to every phase of meat production. Guided tours allowed attendees to walk through each area of the facility, getting an up-close look at the kind of professional-grade infrastructure that until now may have required students to seek experience elsewhere.

Harry Brown led tours of the abattoir during the event, while Ed Didion was among those on hand to view the facility’s cooler space where meat hangs during processing. The level of detail built into the facility reflects the university’s commitment to preparing students for careers in Idaho’s livestock and meat production industries — sectors that remain vital to the state’s agricultural economy.

Animal science junior Karly Krasselt, who is majoring in animal science with an emphasis in production, was on hand during the event to restock refrigerators with Vandal Brand Meats products for attendees to purchase. The presence of working students during the grand opening underscored the facility’s dual role as both an educational program and a functioning operation that produces beef and other products sold directly to the public.

Lines formed as attendees waited to purchase Vandal Brand Meats, with customers browsing available cuts from display refrigerators stocked throughout the event. For statewide coverage of University of Idaho programs and developments in Idaho’s agricultural sector, readers can visit Idaho News.

Honoring a Legacy in Idaho Agriculture

The facility carries the name of Ron Richard, reflecting the kind of philanthropic partnership and recognition of individual contributions that helps public universities expand their infrastructure beyond what government spending alone can provide. The naming honors Richard’s connection to the meat science and agricultural community that the center is designed to serve.

The University of Idaho’s College of Agricultural and Life Sciences has long served as a cornerstone of the institution’s mission, reflecting Idaho’s deep roots in farming, ranching, and food production. The Palouse region — home to some of the most productive dryland wheat and lentil farming in the nation — depends on a pipeline of trained agricultural professionals, and investments in facilities like this one directly support that pipeline.

University of Idaho student leadership has also been active in supporting campus initiatives. ASUI President Seyi Arogundade has been recognized for his work leading the student body during a period of significant campus growth and development.

The new center positions the University of Idaho as a more competitive destination for students pursuing careers in livestock production, food science, and meat processing — fields with strong employment prospects in Idaho and across the region.

What Comes Next

With the grand opening now complete, the Meat Science and Innovation Center Honoring Ron Richard is expected to begin serving students in the College of Agricultural and Life Sciences on a regular basis. Vandal Brand Meats products are available for public purchase at the facility at 775 Perimeter Drive in Moscow. University officials have not yet announced a formal public retail schedule, but Friday’s event demonstrated strong community interest in the program. Latah County News will continue to follow developments at the University of Idaho’s agricultural programs as they expand to meet the needs of Idaho’s farming and ranching economy.
